Through blogging you meet so many amazing bloggers who are so positive and supportive about your work. They come from far and wide and although you have never meet them in person and perhaps never will you can’t help but form a friendship with them, after all we are in the same boat sharing the experience of blogging. For as long as I have been blogging Lindsey from American Heritage Cooking has been flowing me and my little blog. Each recipe I write she is there to share her joy and best wishes with me, I’m always so happy to get her little comment below.
Lindsey has an amazing blog and she is such a talent in the Kitchen, her blog is my go to blog for cookies. Whenever I know my sister is coming over I rush to American Heritage Cooking and scroll through all her cookies and man does she do cookies well. I always end up baking this next recipe even though I’m spoilt for choice. I really want to make her grandmas award winning peanut cookies but I can never resist chocolate chips. Maybe I should combine the two, mmmm chocolate chip peanut butter cookies. Now that’s an idea.
Lindsey refers to these as her Favorite Chocolate Chip Cookies and baby can I tell you why, there super duper awesome with cherries on top. I only ever have about 30 mins notice when my sister is coming over so I make these and pop them in the oven with out refrigeration and we naturally devour them. The longer you leave them in the fridge the better they get. This recipe makes a huge batch and I normally cook about 6 at a time so my sister an I can’t eat them all in one go. The remaining ones are put in the fridge for the following nights, and each night they get better and better. The bottoms of them get nice and crispy and the tops are super gooey, we are talking straight out of the oven naturally they don’t have time to cool down 🙂

- 350g butter softened or 3 sticks
- 1 ¼ cups brown sugar
- 1 ¼ cups white sugar
- 2 eggs
- 1 tablespoons vanilla
- 4 cups of plain flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 250g dark chocolate chips
- Pre heat the oven to 190C or 375F
- Cream the butter and the sugars until light and fluffy then beat in the eggs and the vanilla.
- Sift in the flour, baking power and the baking soda and stir through until combined.
- Stir through the chocolate chips and then us a ice cream scope to spoon the mixture onto trays.
- Bake for 10 minutes or until brown around the edges and slightly under done in the middle.
- Eat immediately
