To My Dear Readers,
Wishing you a very Merry Christmas, I hope you are having a wonderful day with family and friends. I hope you have all eaten far to much and enjoyed some great Christmas food. We have just finished our lunch and are all having a bit of a rest before hitting the desserts. So I thought I would post this while I had a chance.
I made these ginger breads a few weeks ago for a little shop called Eco Ivanhoe, I approached the lady who owns the store a few weeks back to ask if she would be interest in stocking my book, she said she would be delighted to. She asked if I would also make here some gingerbread men and some shortbread for Christmas, to sell in her store. I jumped at the chance.
These little men wouldn’t have been made without my sisters help, she had the right food colouring and the skills to mix it for me. I was very surprise how much of the food colouring gel she had to put into them to get the royal icing the right colour as it first went a very orangey red, which just wouldn’t do. So we put lots more in. I think we nearly used half the jar. I then started pipping the men but I had made the icing a little to thick so the icing wouldn’t run smooth. I added some more lemon juice and then it worked a treat. It was such fun coming up with the different designs to make for the men, I highly recommend it.
- GINGERBREAD MEN
- 125g butter
- 1/2 cup brown sugar
- 1/2 cup golden syrup
- 1 egg
- 2 1/2 cups flour
- 3 teaspoons ground ginger
- 2 teaspoons ground cinnamon
- 1 teaspoon baking soda
- ICING
- 2 large egg whites
- 4 cups icing sugar
- Juice of a lemon
- 1 teaspoon of red food gel
- Pre heat the oven to 200C
- Cream the butter, sugar and golden syrup together using an electric beater, add the eggs one at a time until combined.
- Sift the flour, ginger, cinnamon and baking soda together then pour into the wet ingredients and stir through until well combined and a dough has formed.
- Place on a floured bench and roll out with a rolling pin until about 5mm thick. Cut out the ginger bread men and place on a lined baking tray. Bake for 15 minutes or until golden. Set aside to cool.
- To make the icing, whisk the egg whites with an electric beater until they form soft pecks, then slowly add the icing sugar while constantly beating. Add the lemon and beat until thick and glossy. If the icing is to thick add some more lemon to thin it out a little and make it easier to work with.Separate the mixture into two bowls and add the red food colouring to one. Place the icing into icing bags and pipe onto the cooled ginger bread. Make sure you cover the icing with cling wrap when not in use as it will dry when in contact with the air.
