With winter fast approaching, the choice of fruit to choose from is a little less than it is in the summer months. But the good old fashioned apple is hard to pass up, especially when the idea of hot apple pie on a cold night are lingering in the back of my mind. The smell of apple and cinnamon cooking really does get the taste buds going. Apple pies are a nice rustic and comforting dessert that really are a family crowd pleaser, I always remember my mum making a apple pie when I was a child, maybe thats why I’m so fond of them. I remember my mum buying the dough to save time which you could of course do here instead of making it, if you were super time poor you could even buy the apples in a tin, however I have to say fresh apples are so much tastier and it doesn’t take much to cut up a few apples. My mum use to add sultanas which I personally can’t stand however please feel free to add some if you love that burst of sweetness.
- DOUGH
- 2 cups plain flour
- ⅓ cup caster sugar
- 200g butter cubed
- 1 egg
- water if needed
- FILLING
- 9 medium sized apples
- 1 teaspoon cinnamon
- 1 cup water
- Pre heat the oven to 180C or 350F
- To Make the filling, peel, core and chop the apples and place into a saucepan with the cinnamon and the water. Simmer on a medium heat until the apples soften but still hold their shape. Remove from the heat and drain the water using a colander.
- To make the filling, place the flour, sugar and butter into a bowl and rub with your fingers until the mixture resemble fine bread crumbs. Then add the egg and stir until a dough forms, kneed the mixture a couple of times on the bench, if the mixture is a little dry wet your hands to a touch of water.
- Cut the dough into to half and roll the first half out on a floured bench, to fit into a 23cm pie tin. place into the tin, then fill with the stained apples. Roll out the other half and place over the apples. Run a knife around the side of the tin to remover the extra dough. The use a fork to push the edges down, if the edges don’t join because there is too much flour, brush a little water between the two then press down with the fork again.
- Use a knife to prick the top of the pie so the steam has somewhere to go. Sprinkle with some sugar if desired.
- Place in the oven and bake for 50mins or until golden brown
